Grilled Lamb Ribs with Rosemary Garlic Marinade

Ingredients:

  • 2 racks of lamb ribs
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Zest and juice of 1 lemon
  • Salt and black pepper to taste

Equipment Required:

  • Grill

  • Charcoal chimney (optional)
  • Mixing bowls
  • Tongs

Directions:

  • Marinate the Lamb Ribs:

In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon zest, lemon juice, salt, and black pepper.

Rub the marinade all over the lamb ribs. Cover and refrigerate for at least 2 hours, or overnight.

 

  • Prepare the Grill:

Light the charcoal using CINNAGRILL® All Natural Cinnamon Fire Starter and a charcoal chimney (optional). Allow the coals to become white-hot, about 15-20 minutes.

 

  • Grill the Lamb Ribs:

Place the marinated lamb ribs on the grill over indirect heat.

Grill for about 20-25 minutes per side, or until the ribs are tender and cooked to your liking.

 

  • Serve:

Remove the lamb ribs from the grill and let them rest for a few minutes.

Cut into individual ribs and serve hot.
